I made your bread yesterday. You are right–it IS the best tasting keto bread yet! And I’ve made dozens of recipes through the years! I enlarged it–made a recipe and a half, and used a 9×5 glass pan. I confess, I did make a mess of it at one point. I used carton egg whites, and they didn’t do as well as fresh egg whites do. I ended up with a lot of foam on top and liquid on the bottom. I tried adding the dough to it, but had trouble smoothing out the many lumps. Soooo, I used my hand mixer to mix the whole mess. I put it in the pan and decided to just throw it out, thinking it could never turn into a good loaf of bread. But I went ahead and put it in the oven, and it turned out great! The rise was higher than any other almond flour bread I’ve ever made. So it’s obviously a very “forgivable” recipe. Many thanks!!

So as you can see, essentially your body is able to create its own source of necessary glucose without getting it from carbohydrate foods. The human body is very efficient, and it knows just how to convert other macronutrients (protein and fat) into useable molecules that can be dispersed throughout the body as needed.
More recently a community of researchers and athletes have emerged who feel that following a ketogenic diet offers a performance advantage, especially to endurance sports where athletes are more likely to run out of stored carbohydrate during the event. Research on cinnamon’s blood sugar-stabilizing powers is a little mixed, and it may not be a wonder spice. But if you’re adding it to an already healthy diet, it may have a subtle benefit. Some studies suggest that cinnamon lowers blood sugar by increasing insulin sensitivity, or making insulin more efficient at moving glucose into cells. Choose foods that are less likely to cause an additional sudden rise in blood sugar. These foods can be identified by determining their glycemic index value (see Resources). Look for foods with a low glycemic index value, such as beans and legumes, and avoid high glycemic foods, such as white potatoes. I have been looking for a good keto bread recipe. I have tried a few others with a “meh”. This one is a WOW! Prior to going Keto, I loved to cook and bake, it is my main hobby. But after going Keto, I have had to learn a whole new way of cooking. Ketosis occurs either as a result of increased fat oxidation, whilst fasting or following a strict ketosis diet plan (ENDOGENOUS ketosis), or after consuming a ketone supplement (EXOGENOUS ketosis). When in a state of ketosis the body can use ketones to provide a fuel for cellular respiration instead of its usual substrates: carbohydrate, fat or protein. 
The findings of a stable (Chearskul et al., 2008) or slightly increased response (Sumithran et al., 2013) of post-prandial FFA after KD can be viewed in the nutrient-static context. Elevated circulating FFA may actually reduce food intake and glucose production through actions on specific hypothalamic neurons (Obici et al., 2003). It has been suggested that this effect could be mediated by the increase of cellular concentration of long-chain FAs-CoA in the arcuate nuclei of the hypothalamus (Obici et al., 2003).
