Also that’s absolutely wrong information about microwaves. Breast milk is not microwaved because of the uneven heating which can cause ‘hot spots’ which will lead to your baby’s mouth being burned. It does nothing to the nutrition of the milk itself or the proteins. There is a lot of fear mongering about microwaves and most people don’t understand the basic principle of how it works. It’s like people who blindly say there are ‘chemicals’ in food not realizing that everything is a chemical compound, even drinking water. So don’t worry 🙂

Since then, it’s safe to say I dove down the rabbit hole. The more I learned, the more I grew tired of reading so much misinformation on the topic. While there are more thoughtful people and articles on the subject of ketosis these days (e.g., here’s a thoughtful video on ketosis and ketogenic diets from one of my most important ketosis mentors, Steve Phinney, a co-founder of Virta Health1Disclosure: I’m an investor in, and advisor to, Virta Health.), there are still pieces like the one Vox published this month, that doesn’t exactly do the topic justice.

Insulin (in-suh-lin): A hormone made by the cells in your pancreas. Insulin helps your body store the glucose (sugar) from your meals. Before we get started, here’s a short recap of the tips so far: The first and most crucial piece of advice was to choose a low-carb diet. Hi Amber, Yes, the baking powder and egg whites do help it rise a bit, just not as much as regular bread. It’s hard to say what went wrong, if anything. Everyone’s palate is a little different, so it’s possible you just didn’t like it, or maybe something didn’t go as it should have. It could be that the batter and whites weren’t folded together quite enough?
While there’s no such thing as a diabetic diet anymore, there’s only so much your system can handle at once when it comes to foods that turn into sugar quickly. Here’s my advice: deprive yourself of no food, but limit yourself to one carb portion per meal. Carbs tend to be white in color: things made of flour (including pasta), potato, rice, and sugar. Oh, and corn is pale yellow, so it’s a white food, too. If you make sure every meal has only one white food, you’ll lower the blood sugar impact of the entire meal. If you want a baked potato, that’s not the meal to have a dessert with. If you want some ice cream, keep the meal to a pork chop, some green beans, and some cottage cheese (along with cauliflower, the only white-colored food that isn’t on the white foods list).

The longest studies/follow-ups for ketogenic diets are about 10 years long and have shown it to be safe [3, 4, 5, 6]. Consistent with the mechanisms described above, changes in AMPK in response to a ketogenic or low-carbohydrate diet have been reported in several studies. Hi Howard, You’re right that this bread doesn’t rise much – the volume comes mostly from whipping the egg whites. If the whites fell too much, the bread might not be tall enough. But even if they didn’t, it might still be shorter than some other tall bread loaves. Feel free to multiply the recipe by 1.5 if you prefer a taller loaf. I’m glad you liked the flavor and texture!
I made this over the weekend. I weighed all of my ingredients and it looked beautiful when it came out of the oven. I baked it for the 75 minutes. It fell after it cooled and when I cut it open, it was purple and a little gummy even after 75 minutes of baking time. After toasting the slices, it tasted very good and I even served it to company. The kids all thought it was cool that the bread was purple. Should I reduce the water? If so, by how much? I will try and get Jay Robb psyllium husk powder in the future. I used Vitacost brand and it tasted fine but, it is not always easy to get people to try purple bread. Thanks for the recipe. We will be making purple bread until we run out of the psyllium husk powder we have.
Going from a standard-American diet to a well-formulated low-carb or ketogenic diet is a health upgrade. Toasting it did no good as it had that “plastic” smell that Mizzsingbabe mentioned. I tried cutting a very thin piece, loading it with butter, garlic powder, salt and grilling in cast iron fry pan, then broiling it but still cannot get past the plastic/smell taste. So I wasted 3 cups of (not cheap) almond flour along with all the other ingredients.
I so miss bread fresh from the oven (I’m going to be adding the yeast)! You are absolutely correct about beaten egg whites creating air pockets. My family has always made buttermilk pancakes from scratch and we always separate the eggs, beat the whites to soft peaks and fold them in at the last minute. The pancakes rise beautifully! Hello, thank you for the recipe! I’m only a short time on the Keto program and miss carbs SOOO much! Tried this bread for the first time tonight and have a few things to say. For anyone not on the metric system, it works out to be about 3.2 tablespoons for the flour and 2.1 teaspoons for the butter. I’m assuming mine came out okay with those measurements but, if someone came up with a different amount, please let me know. Now, the bread came out exactly as you said it would. I cut mine in slices and put it straight into the toaster oven until it started to brown on top and get a little crunchy. For my filling I used some aged white cheddar and a couple thin slices of organic ham. With the cup I used, this came out about 2/3 the size of an English muffin. I was so excited for the first bite! Now, the negatives, which I’m hoping to fix. As it was microwaving, and when I pulled it out, there was just a really unpleasant, weird egg smell. I’m SOOO over eggs right now that I’m hoping I can figure out a way for that to go away. Maybe adding some garlic to the mix??? Also, I could taste the egg in the bread. Maybe for a breakfast sandwich it wouldn’t be so noticeable but, for the sandwich I made, it almost hid the taste of my ham and cheese. Back to the positives. This was only my first attempt and I’m THRILLED that I felt like I was having a sandwich. I like how some people have added their “recipes.” If I come up with a good one, I’ll write a quick replay. In the absence of acetyl CoA (several ways this can happen, including substrate shortage, as I’m describing here) we evolved a cool trick.  Our liver can make – out of fat or protein, though we much prefer to use fat so we can spare our protein and prevent severe muscle wasting – something called beta-hydroxybutyrate, one of the 3 ketone bodies I described above.

In the previously described C. elegans experiments demonstrating mitohormesis, knockout of the NFE2L2 homologue SKN-1 attenuated the increases in antioxidant enzyme activity and lifespan [73], indicating that mitohormesis may, at least in part, be dependent on NFE2L2 signaling. This increase in NFE2L2 content appears to have mediated the subsequent decrease in mtROS to a level below baseline [96], thereby further indicating a likely role of NFE2L2 in the induction of mitohormesis during a ketogenic diet.
