On a less serious (but still important) note, it is important to start using MCT oil slowly. Because it is so readily and quickly used by the body, it can lead to all kinds of (temporary but embarrassing) digestive disturbances if you jump in to quickly. I’ve even stumbled across entire threads in online forums bemoaning the “disaster pants” that resulted from using too much MCT oil too quickly. Cut out the alcohol for now: Many people love the fact that on a low-carb or keto diet you can have a glass of dry white or red wine from time to time. If you are experiencing a weight-loss plateau, or gaining weight, cut out all alcohol for now until weight loss starts again. Even a few drinks a week can cause a stall. “I love my Friday night glass of wine after a hard week, but I will cut it out for now,” says Samantha.

It still needs to have a rice texture. You will also need to add some cream cheese to the cauliflower to work for this rice substitute. Otherwise you’ll just get the cauliflower everywhere!
There has also been increased interest in the diet’s effects on aging and cognitive function. [9-11] Cell damage through stress and inflammation that can lead to age-related diseases has been linked to a specific part of DNA called telomeres. These structures naturally shorten with age, and their length size can predict life expectancy and the risk of developing age-related diseases. Telomeres with long lengths are considered protective against chronic diseases and earlier death, whereas short lengths increase risk. Antioxidants can help combat cell stress and preserve telomere length, such as by eating foods that contain antioxidants nutrients like fruits, vegetables, nuts, and whole grains. These foods are found in healthy eating patterns like the Mediterranean diet.  This was demonstrated in a large cohort of 4676 healthy middle-aged women from the Nurses’ Health Study where participants who more closely followed the Mediterranean diet were found to have longer telomere length. 
Emerging evidence suggests that eating this way may offer protective effects for those with and at risk for type 2 diabetes. For one, Mediterranean eating improves blood sugar control in those already diagnosed with the condition, suggesting it can be a good way to manage the disease. What’s more, given those with diabetes are at increased odds for cardiovascular disease, adopting this diet can help improve their heart health, according to a paper published in April 2014 in the journal Nutrients. Of course, the most famous use for MCT oil is Dave Asprey’s Bulletproof® Coffee recipe. This fat-packed coffee uses a mixture of grass-fed butter and MCT oil for a brain and energy boost. I accomplish similar results by adding coconut oil to my healthy coffee recipe, but have tried the MCT version and can vouch for its energy-boosting and brain-focus inducing properties. (Note: There are two Bulletproof® brand MCT oils: XCT Oil (C8+C10)and Brain Octane oil (Pure C8), which do contain palm but are sustainably sourced and use a super-clean steam distillation process of extraction).
In one animal study published in the Journal of Animal Feed and Sciences, when pigs were either fed a standard feed mixture (the control) or the same mixture supplemented with two grams each of caprylic or capric acid MCTs, the pigs receiving MCTs showed improvements in bacterial gut health, performance, growth and digestion of nutrients, including proteins and fiber. Wow! You look great. I am in. Always worked out, always ate what I thought was cleanly. 2 years ago I began eating primally and was in awesome shape but let the stresses of the wine biz add it back on. A piece of bread (or 3!!!) here and there, etc. In just two days, I’ve lost 3 lbs. I work out 4 days a week (2 day split x 2, all free weights) and HIIT 2 x a week (usually one day on its own and then on chest/back/tri day). No fears of bulking up (I’m female).
