Now, if you had looked only at the blood lipids of the monkeys eating the monounsaturated-fat-rich diet in this study, you’d have thought they would have ended up with cleaner arteries than those that ate more saturated fat. Compared to monkeys fed the diet high in saturated fat, the monkeys fed the monounsaturated-fat-rich diet had lower LDL bad cholesterol levels and higher HDL good cholesterol levels (similar to what happens in studies with humans). And compared to monkeys fed a diet high in polyunsaturated fats, the monkeys fed the high-mono diet had HDLs that were nearly twice as high (again, just like humans).

Welcome to Keto! I cannot say enough good things about it! Your starting macros really depend on a few factors: current weight, height, approximate body fat, activity level, age, and gender. Its also important to figure out your BMR and daily calorie allotment. Each person is different; there is no way I could eat 150 grams of fat and get in a good amount of protein while remaining under my calorie limit for the day (1300). It is recommended that you re-calculate these numbers if your activity level or weight changes. Every 15 lbs I lose I take a look at my Macros. Interestingly, a few years ago the American Heart Association lowered the recommended intake of saturated fat to no more than 7% of total calories eaten each day. Olive oil is 14% saturated fat. (The average American consumes a diet with about 14% saturated fat.) So if you’re using a lot of olive oil on your food, it’d be hard to have a diet that’s less than 14% saturated fat, which means your arteries are being subjected to double the saturated-fat-limit that the AHA recommends.
3. Proteins: Good proteins to eat include fish and shellfish, especially varieties packing omega-3 fatty acids. Some of the healthiest seafood you can eat are salmon, arctic char, mackerel, anchovies, and oysters. It's more than just Greek and Italian cuisine. Look for recipes from Spain, Turkey, Morocco, and other countries. Choose foods that stick to the basics: light on red meat and whole-fat dairy, with lots of fresh fruits and veggies, olive oil, and whole grains. Day 1: It's 8:15 a.m. and my stomach is growling. It knows it's time for its breakfast, and I'm depriving it. I blended my protein coffee and ran out the door. My first thought is that the vanilla flavor is a nice complement to black coffee. But toward the end of the thermos, I realize that no matter how you dice it, vanilla bone broth protein coffee is not the same as a vanilla blonde roast with skim milk.
And monounsaturated fat isn't the only thing olive oil has going for it nutritionally.
